Russell's cooking style balances simple, complex, and unexpected flavor combinations using the freshest local ingredients sourced within 250 miles of Brooklyn. He believes food is a vessel—accessible to all, with the potential to elevate the simple human experience of breaking bread together into something transcendent. Sourcing Philosophy

All produce sourced within 250 miles of Brooklyn and the Hudson Valley at peak season. Russell maintains direct relationships with growers and seafood suppliers, ensuring ingredients arrive days before the event. For Suzannah and Maurice's celebration, proximity to the Hudson Valley allows leverage of local farms and fishers—the meal will taste of place and season, reflecting both families' values around food, ingredients, and sustainability.

European-Style Fish Crudo: Very few ingredients—excellent olive oil, flaky sea salt, fresh lemon. Callback to Cachet, Paris.
House-Pickled Assortment: Olives, cornichons, pickled okra — displayed throughout the grazing spread

Little Gem "Bite": A nod to Roberta's—little gem lettuce, anchovy dressing, crispy breadcrumbs. Intimate callback to the couple's favorite lunch.
Deviled Eggs: Southern nod. Classic preparation, elevated with subtle seasoning and garnish.

Chic Outdoor Fire: Russell to propose fire cooking concepts in coordination with Windrift.

Awaiting Guests at Table
Pickled Welcome Board: Pickled olives, cornichons, pickled okra presented on a bread board or small side dish at each table setting. Guests are greeted with this as they sit for dinner — a subtle, recurring theme that ties the evening together.
First Course — Family-Style

Second Course - FAMILY Style
2 Vegetable Dishesof the Moment: Market-driven. Heirloom tomatoes, corn, stone fruit, seasonal produce at peak. Prepared to highlight, not hide, the ingredients.
Main Course (Plated) — Choose Your Path
Whole Grilled Fish: The emotional anchor. Inspired by Cachet, Paris—a whole fish, finished with excellent olive oil, flaky sea salt, fresh lemon. Species confirmed closer to date based on market availability.
Local Meat (not pork): Simple, seasonal, local. Prepared to leave guests ready to dance, not slumped.
Vegetarian / Vegan Main: Equal care and portion. Not a reworked side—a full plate that stands on its own.
100 guests • All proteins finalized during Menu Kickoff
Large Tiramisu with Local Fruit — playful, unfussy, serves 100. Not a neat cake. Topped and garnished with seasonal Hudson Valley fruit (berries, stone fruit from local markets). Italian in spirit, ingredient-forward in execution.
Post-Dessert Plus-up Station
Bialetti Espresso Station: Italian espresso machine on a white round side table. Continuous service post-dessert. Accompanied by biscotti and small treats. Self-serve station that stays active through the evening.
Tiramisu is the confirmed dessert selection. Seasonal fruit garnish confirmed at Menu Kickoff based on Hudson Valley harvest availability.
Wine & Bar Program
Simple. Supportive. Not the Focus.
The wine and bar program is thoughtful and intentional. Russell coordinates all service pacing and wine/cocktail integration with courses.

Menu naturally accommodates gluten-free, dairy-free, vegan, and vegetarian guests. All accommodations receive equal care and portion consideration—never an afterthought. Couple has guest list with specific allergies (nut allergies noted); Russell will coordinate all details at Menu Kickoff.

All food, ingredients, prep, menu design. Sourcing coordination within 250 miles. Wedding day catering fully managed.

Note: Optional enhancements are separate and can be added anytime up to on month prior to event. Gratuity is prepaid via ach.
Payment Schedule: 50% due upon signing (non-refundable) · 25% due 90 days prior ( half refundable up to 45 days out) · Final 25% due 45 days prior (half refundable up to 21 days out). Payment by ACH (preferred) or credit card (+ 3% processing fee).

Partners & Vendors
Essential Herbs handles all food, beverage, and hospitality service. The following are outside our scope and handled by the couple, their planner, or approved vendors: Photography + Video, Floral + Décor, Music + Entertainment, Attire + Beauty, Invitations + Stationery, Officiant, Transportation, Guest Favors + Gifts, Venue coordination (Windrift & Pocketbook Factory). Wedding planner (if desired) for month-of and day-of coordination. Friday rehearsal dinner (Pocketbook Factory).
Next Steps
Menu Kickoff (90 minutes)
Call with Russell to refine menu direction, confirm bar preferences, discuss dessert approach (traditional cake, non-traditional, fire pit s'mores, peach incorporation options). Discuss dietary needs and any guest restrictions. Two rounds of menu revisions included.
Menu Finalization
All Saturday dishes locked. Sourcing plan confirmed. Final guest count due.
