Exploration: In Sicily between Noto and Ortigia

We took a culinary exploration in Italy in the summer of 2023.  To eat fish and taste the salt. To bring back dishes and inspiration for private dinners. We spent time at the Mercato di Ortigia where we picked up a slew of tiny fish. Pairing them with fresh stone fruit. We visited Three Farms Island - a traditional, regenerative farm, steeped in heritage going back generations.  There are a few selects taken.
