Russell Markus founded Essential Herbs to bring chef-led rigor to private events. Every menu is built from his understanding of what's at peak season, who grew it, and how to honor those ingredients. He approaches each event as a full production: every menu is custom-designed, service is tailored and intentional, and the sourcing philosophy is foundational to the work. Russell maintains direct relationships with growers within 250 miles of Brooklyn, ensuring ingredients are harvested days before the event. The result is food that represents the season, courses paced to breathe, and service that is attentive and purposeful.

Kitchen Setup
Board room as satellite kitchen. All cooking equipment (stoves, griddles, prep tables, reach-in coolers, smallwares) will be rented and brought on-site. Essential Herbs coordinates with equipment rental companies and arrives early for setup optimization.
Terrace Activation
Yakitori grill and oyster station setup on terrace. Essential Herbs sources equipment and fuel. Live cooking visible to guests creates energy and engagement. Setup/breakdown included in service window.
Front of House & Service
Full FOH team handles passed service, station management, and guest flow. Bar capabilities included (cocktails, non-alcoholic options, wine/beer service). TBD: whether client provides bar staff or if EH brings dedicated bartender.
