This event balances sophistication with approachability — high-quality party food that feels refined rather than formal. Terrace activation (yakitori and grilled oyster station) creates theater and energy. Indoor service through passed canapés and bowl food maintains flow and visual interest. The menu leans into June's peak abundance: stone fruit, early berries, peak greens, fresh herbs, seafood, and seasonal proteins. Everything is designed for seamless execution in a satellite kitchen environment.

Russell Markus founded Essential Herbs to bring chef-led rigor to private events. Every menu is built from his understanding of what's at peak season, who grew it, and how to honor those ingredients. He approaches each event as a full production: every menu is custom-designed, service is tailored and intentional, and the sourcing philosophy is foundational to the work. Russell maintains direct relationships with growers within 250 miles of Brooklyn, ensuring ingredients are harvested days before the event. The result is food that represents the season, courses paced to breathe, and service that is attentive and purposeful.

Activation Framework

Kitchen Setup
Board room as satellite kitchen. All cooking equipment (stoves, griddles, prep tables, reach-in coolers, smallwares) will be rented and brought on-site. Essential Herbs coordinates with equipment rental companies and arrives early for setup optimization.
Terrace Activation
Yakitori grill and oyster station setup on terrace. Essential Herbs sources equipment and fuel. Live cooking visible to guests creates energy and engagement. Setup/breakdown included in service window.
Front of House & Service
Full FOH team handles passed service, station management, and guest flow. Bar capabilities included (cocktails, non-alcoholic options, wine/beer service). TBD: whether client provides bar staff or if EH brings dedicated bartender.
Staffing for 200 Guests
1 Head Chef + 4 Sous Chefs + 2 Line Cooks | 2 Captains + 10 Servers + 2 Porters | 1 Bar Lead + 4 Bartenders + 2 Barbacks. Setup begins 3 hours prior; breakdown 1 hour post-event completion.
Rentals & Logistics
EH oversees all rental coordination: kitchen equipment, grills, station setup, smallwares, linens, ice, glassware. Final rental list and cost confirmed pending site visit and kitchen assessment.

Scope Notice: This proposal is an initial review of the event and is not a final contract. Pricing, logistics, and event details are estimates pending Menu Kickoff call and site visit. Changes to event length, guest count, or service requirements will result in updated fees and timeline. Final proposal will be delivered after confirmation of all event parameters.

Site Visit & Kitchen Assessment
Russell visits venue to assess board room kitchen setup, terrace access, power/water availability, and logistics. Final equipment rental list and cost determined. Estimated 1–2 weeks.
Menu Kickoff Call
90-minute call with Russell to finalize menu direction, dietary needs, flavor preferences, beverage details, and staffing. 2 menu revisions included prior to June event.
Menu Finalization
Final menus locked 3 weeks prior (early June). Russell visits farmers market to source and confirm availability. Final canapé and bowl recipes locked based on peak seasonal ingredients.
Sourcing & Production
All produce sourced within 250 miles of Brooklyn at peak season. Ingredient sourcing confirmed with farmers 1 week prior. Final prep schedule established to ensure freshness and seamless execution.
Final Details
14 days out: Final headcount confirmed. 7 days out: Bar and staffing logistics locked. 3 days out: Final equipment rental confirmation and on-site logistics call.
