One statement piece. Plus simple, chic, healthy, and delicious.

Rather than a spread, the food at MOVE is built around a single communal moment: a six-foot sandwich laid down the length of the table, presented whole and cut in front of the runners as they come in. It reads from across the room, it photographs well, and it gives everyone the same thing to gather around.

Alongside it, a warm cup of soup carries guests from the finish into the wellness portion of the day, and the fridge is stocked with carb-forward snack jars for runners to grab — so the experience continues past the door.

The menu is led by Chef Russell Markus, who ran the critically acclaimed Hot Soup and Bad Larry's Sandwiches pop-up at the former Scarr's Pizza location — covered by Vogue, Eater and The Infatuation, and featured on the cover of Off Menu Magazine. In addition to Essential Herbs, Russell owns Red Coffee Stand in DUMBO. Across all of it, the focus is the same: quality and local ingredients.

The Long Sandwich Six Feet · Communal

Built on a single custom-baked six-foot loaf — choice of traditional Italian sandwich bread, focaccia, or challah — and served on a full-length board. Presented whole, then sliced into portions at the table.

Alternatively, sandwiches can be hand-wrapped and customized for individual guests.

The MOVE Fridge

We stock the fridge at The Altar with ninety snack jars — carb-forward, runner-minded, and packed in two styles of glass jar so the fridge itself becomes part of the display. Each jar carries a custom MOVE label with the dish and allergens.

Staffing & Flow

Onsite Setup
The Essential Herbs team arrives ahead of the run to build the sandwich table, set the soup station, and stock and style the fridge. Full breakdown and cleanup after service.
During the Event
One sous chef runs the soup station. Two front-of-house attendants handle the sandwich cut, keep the table and fridge looking full and fresh, and maintain the space through the wellness portion.

Pricing reflects up to 75 guests and lands within the $11,000 all-in budget, inclusive of fees and tax. Final guest count to be confirmed; per-guest items will adjust accordingly.

Gluten-free and vegetarian options are built in. Please share any additional allergies or dietary restrictions in advance so we can label and adjust accordingly.
Payment Terms
Full payment due upon confirmation. Payment by ACH (preferred) or credit card (+ 4% processing fee).
