Time to create memories that will last a lifetime.
A celebratory meal for Yumin and Philip. Seven years after meeting, we raise a glass to their support for one another in building a partnership rooted in shared joy, good food, and love. They're both foodies with refined palates, drawn to the brightness of Italian and Sichuan cuisines, with no interest in pretense or fusion. They want their wedding to feel like the best dinner party of their lives: fun, memorable, meaningful, but never stuffy.
This wedding celebrates that partnership through food sourced from the land itself, with flavors that honor both families. Thirty percent of guests are flying from Korea, so the menu will emphasize lighter, vibrant preparations that feel accessible and delicious to everyone at the table. The service style will reflect Yumin's Korean heritage, where meals are meant to be shared—dishes passed around tables, everyone eating together, conversation flowing naturally.
From the moment guests arrive with welcoming beverages to the final bite at the after party, every element is designed to honor the venue's agricultural roots, celebrate the couple's story, and create moments of genuine connection and joy.
Our Approach
Custom catering built around your story
Every Essential Herbs menu is custom-built around the couple's story, tastes, and backgrounds. We work closely with you to understand what flavors matter, what memories you want to honor, and how to create a menu that feels authentically yours—thoughtfully designed for your celebration.
For this wedding, that means: sourcing from Glynwood's farm and Hudson Valley purveyors to highlight seasonal quality, weaving Italian and Sichuan influences throughout the menu (never forced fusion, but intentional), and designing service that mirrors the way you actually want to eat and celebrate with the people you love. Family-style dining, passed bites, stations where guests can engage with the food—all built around what feels right for Yumin and Philip.
We provide complete catering: all food preparation, ingredient sourcing, beverage program management, kitchen staff, bartenders, servers, and complete setup and breakdown including ceremony infrastructure, cocktail stations, and post-event cleanup.

Beverage Service

Premium bar service options—including curated wine selections, craft spirits, signature cocktails, and premium beverage packages—are available upon request at additional cost. Planner Coordination
Florist, table design, and menu card design are handled by planner Kateri Valencia. Essential Herbs coordinates food service, beverage program, and staffing. Ceremony and event logistics are managed hand in hand with the planner to ensure seamless execution.
Venue & Rentals
The venue provides the space; all kitchen equipment and service items must be rented through Peak Event Services. Planner Kateri Valencia coordinates rentals and tenting. Essential Herbs provides a detailed equipment list (kitchen, front-of-house stations, back-of-house prep, beverage service) to the planner for coordination. Essential Herbs catering team handles all setup and breakdown on the wedding day, including ceremony chairs, cocktail hour, reception, and after party. All food and beverage service is provided by the Essential Herbs licensed catering team—the venue does not allow self-service bar.
Farm-to-Table Sourcing & Cultural Consideration
Glynwood is a working farm with produce and meat available. Planner Kateri Valencia will introduce Essential Herbs to the venue farm team for direct sourcing coordination. We'll work with their seasonal offerings alongside Hudson Valley purveyors to create a menu that emphasizes lighter preparations (honoring Yumin's family preference for non-buttery cuisines) while celebrating Italian and Sichuan flavors that both Yumin and Philip love. Optional: Farmer's market walk with Yumin and Philip to co-select seasonal produce and inspire menu direction. Final menu confirmed 4 weeks prior to event.
Premium Ingredients & Specialty Sourcing
The pricing above reflects seasonal, high-quality ingredients sourced from Glynwood farm and Hudson Valley purveyors. Premium ingredient selections such as uni, wagyu, rare mushrooms, specialty proteins, or imported items may incur additional charges at Russell's discretion. All premium sourcing will be discussed and approved during the Menu Kickoff call with cost transparently communicated before final menu lock.
Menu Development & Your Story
Phase 1 (Now): Service framework proposal (cocktail hour format, family-style dinner logistics, passed bites count, station designs, dessert style).
Farmers Market Walk (Approx. One Year Before Wedding): One-hour walk through Hudson Valley farmers market with Yumin, Philip, and Russell to co-select seasonal produce, discuss flavor inspirations, and begin envisioning menu direction.
Phase 2 (After Scope): 90-minute Menu Kickoff call. We'll dive into your relationship, your favorite restaurants and flavors, your families' food cultures, and how to weave those stories into a menu that's entirely yours. We'll discuss Italian techniques with Sichuan brightness, lighter preparations that honor both families, and how to create moments of joy around food.
Phase 3: 2 revisions included, final menu locked 4 weeks prior to event.
Optional Tasting (Available After Deposit): Dinner at Russell's loft to experience the caliber and philosophy of our cooking [four guests — 2 hours].
Staffing & Seamless Execution
Essential Herbs provides all kitchen staff, bartenders, servers, and support staff. All food and beverage service is handled by our team, with careful attention to pacing and guest experience. We coordinate ceremony setup (chairs, infrastructure), cocktail hour stations, full bar service, family-style table service, and complete post-event breakdown. Our team will ensure timing flows naturally so Yumin, Philip, and your guests can focus on celebrating together.
